Over the last 10 months I got pretty into espresso and I saved up my nickels and dimes to get something I absolutely do not need and so far I only have made average at best coffee but I’m learning! Sorry for the yellow lighting. Post on fixing the Morgan inbound.

my previous senior engineer was an old Italian guy who I think mainlined coffee. He previously worked for FIAT in Italy and the US, and would say things like “in a FIAT factory, there was an espresso machine every 100 meters on the line. And if the machine pooped? Strike!”

What are you using for beans and grind? From there water issues take prominence. Then heat and the massive amounts of variables you need to control. Finally you get to deal with the old charmer about correct torque lying in the arm of a mechanic.
I think you need to finesse the grinder into shape and learn how to keep it operating there. Machines normally need to run in. Which takes a lot longer at home than in use professionally. It takes time more than doing things right out of the gate. Congrats, h ope you enjoy it.

That’s what I'm learning now. Success rests in the grind I'm told. I was hoping to take a class sooner rather than later. Once things reopen that will be the first order of business.

There is so much information out there a class might not be necessary.
I’m not sure what the recommended break in for your equipment is. If/once that is fulfilled p ush a full bag of beans through in one session. Pay attention to what changes, mentally, and at what point. Chances are you won’t ever spend three hours straight of your volition again. What you learn and sip there will help greatly for the one or two pulls at a time you routinely do. That is where you could potentially keep written notes to refine your technique.

Nice! It's a good looking setup. I'd be hard pressed not to just go mazzer grinder and rancillio Silvia, but this looks real nice
